Sizing: small cafe 500-1,000L, medium restaurant 1,000-2,000L, large kitchen 2,000-5,000L.
Cleaning frequency: high-grease every 4-6 weeks, medium every 6-8 weeks, low every 8-12 weeks.
Must use licensed liquid waste transporter.
Sydney Water conducts regular compliance inspections with fines of $500-$2,000 per offence for non-compliance..
